Leftovers Club: Spiced Vanilla Honey Biscotti

Jennifer of Savory Simple is spearheading The Leftovers Club, which is a network of food bloggers sending non-perishable leftovers from the recipes that we make. Most of the time, especially with baked goods, I end up making at least a dozen, if not more, of one recipe. For the most part, I bring the leftovers to work, but why not send them over to other food bloggers and receive some treats in return? It's a great idea!

 This week, I decided to make a spiced vanilla honey biscotti. Biscotti is perfect to send in the mail to my Leftovers Club partner, but also because I hosted a clothing swap this weekend and it was a great treat for my guests. This recipe makes one dozen biscotti (or two loaves).


Prep Time: 20 minutes
Cook Time: 60 minutes

Ingredients
2 1/2 cups of all-purpose flour
Four (4) teaspoons of baking powder
One (1) cup of granulated sugar
Two (2) eggs
Two (2) teaspoons of honey
Two (2) teaspoons of vanilla extract
One (1) teaspoon of ground cardamom
1 1/2 teaspoons of ground cinnamon
1/2 teaspoon of ground cloves
One (1) egg white, for egg wash
Two (2) tablespoons of crystal sugar, like Sugar in the Raw
Pinch of salt

Directions
Preheat oven to 325F degrees.
Line a baking sheet with parchment paper and set aside.
Whisk flour, baking powder, salt, cardamom, cinnamon, and cloves together in a large mixing bowl.
In a smaller mixing bowl, whisk vanilla extract, two eggs, and honey together.


Slowly mix the wet ingredients into the dry ingredients until it turns into a dough.
Split dough into two equal sizes and form into a rectangular loaf of about two inches tall and nine inches long.
Place loaf onto baking sheet and bake for 30 minutes.

Remove from oven, brush with egg wash, and top with crystallized sugar.
Bake for another 15 minutes.
Remove and slice into one-inch slices.
Bake for another 10 minutes.
Repeat for second loaf of biscotti.
Remove, let cool, and enjoy with a hot cup of coffee or tea!

    1. Honestly, I'm a much bigger fan of the chocolate-dipped biscotti...until I made this one. The spices and the honey pair so well together. I hope you enjoy!
