Portobello Sliders

Inspired by a recipe on The Curvy Carrot's website (what an awesome blog name, by the way), I made these delicious and filling portobello sliders for dinner. My recipe is slightly different from hers, since I had different ingredients on hand. My recipe makes four sliders (and feeds about two people). Enjoy!


Prep Time: 20 minutes
Cook Time: 10 minutes


Ingredients
Four (4) portobello caps, cleaned
1/4 cup of extra-virgin olive oil

1/4 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of smoked paprika
1/4 teaspoon of dried mustard 
Four (4) rolls -- I used ciabatta, but others -- potato rolls, pretzel rolls, etc -- would work too.
Toppings for your sliders -- I used fake bacon, sharp cheddar cheese, and onion strings.

Directions
In a small mixing bowl, mix the olive oil, salt, pepper, paprika, and mustard until completely blended.

Assemble!
In a bowl or rimmed dish, lay out the mushrooms and brush both sides with the marinade.
Let sit for 10-15 minutes.
Heat a frying pan on medium heat (you can also grill these outdoors if you'd like).
Place the mushrooms in the pan and cook for about five minutes until they begin to soften.
Flip them over and cook for another two minutes.
If you're topping your sliders with cheese, place the slices on the portobello cap and cook for another two minutes while they melt.
Remove from the grill, place on the buns and top with whatever you'd like.
