Orange Chocolate Chip Muffins

I can't stop baking! Seriously. I think it's a problem. Because I still have homemade marmalade from a batch that a friend gave me, and given my baking problem, I decided to make a sweet, orange-y baked good. These were easy to throw together and you could make a lot of variations of it as well. Instead of chocolate chips, you could add cranberries, almonds, walnuts, whatever. This recipe makes about 15 cupcakes and is an adaptation of this original recipe.




Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients
Two (2) cups of all-purpose flour
1/4 cup of sugar
3/4 teaspoon of salt
Two (2) teaspoons of baking powder
Two (2) eggs
1/4 cup of butter, melted
1/2 cup of homemade orange marmalade
3/4 cup of milk -- I used almond milk
Three tablespoons of orange juice -- You can also use Cointreau or other orange liqueur
Handful of dark chocolate chips

Directions
Preheat the oven to 400F degrees.
In a mixing bowl, blend all dry ingredients together (flour, sugar, salt, baking powder).
In a separate bowl, beat eggs, and then add butter, marmalade, milk and juice. Blend together.
Slowly pour the wet ingredients into the dry ingredients and continuously stir so to blend well. It may be a little lumpy, but that is okay.
Add the chocolate chips and fold into the dough.
Pour batter into greased cupcake liners.
Bake for 20 minutes, or until cooked thoroughly.
