Pistachio Sesame Vegetable & Rice Bowl

There are so many fresh veggies out there right now, it's hard not to get excited about the possibilities! I tossed together some of the veggies hanging out in my house and made a delicious stir fry, served over brown rice. This recipe makes one large dinner serving or two lunch servings. Enjoy!

Prep Time: 5 minutes
Cook Time: 15 minutes

One (1) cup of brown rice, cooked
One (1) cup of green beans
One (1) cup of broccolini
1/2 large onion, chopped
Two (2) cloves of garlic, minced
Three (3) tablespoons of olive oil
One (1) teaspoon of sesame oil
1 1/2 tablespoons of pistachio butter
Two (2) stalks of green onion, chopped
Handful of toasted sesame seeds for topping

Cook brown rice
as according to package.
In a large frying pan or wok, heat the garlic, two tablespoons of olive oil and the sesame oil.
Once the oil is heated to a medium heat, toss in the onion and saute for about three minutes.

Next, toss in the broccolini and green beans and let cook until soft.
Spoon in the pistachio butter and one tablespoon of olive oil. Mix around until everything is coated.
Remove from heat, spoon the veggies over the brown rice, and top with green onions and sesame seeds.
