I made some chili for a friend's work competition early last month. It was super-easy, since I just put it in my slow cooker all day and let it go. To make it stand out amongst the competition, I used cocoa powder (think mole sauce) and three different kinds of beans (since I wasn't using any meat). This recipe makes about five full servings.
Prep Time: 10 minutes
Cook Time: 2-8 hours
Ingredients
One (1) can of black beans
One (1) can of pinto beans
One (1) can of kidney beans
One (1) small can of sweet corn
One (1) tomato, diced
One (1) red onion, diced
Two (2) cloves of garlic, minced
1/2 cup of vegetable stock
1/2 tablespoon of cocoa powder
One (1) teaspoon of cayenne pepper
1/4 teaspoon of cumin
1/4 teaspoon of cinnamon
Salt & pepper to taste
Directions
Toss everything into your slow cooker and stir until it is combined.
Cook on medium-high for at least two hours, or until the chili begins to thicken.
Serve warm.
