Cucumber Sandwiches

I recently made these cucumber finger sandwiches for a friend's baby shower (hence the duck-shaped bread). This recipe is so simple that I'm not sure I even need to write it out, but they were such a hit that I wanted to share the love. These sandwiches are a great meatless addition to a party spread or even as an everyday lunch. This recipe makes about 12-20 sandwiches, depending on how you slice them.



Prep Time: 20 minutes
Cook Time: none

Ingredients
One (1) loaf of bread -- you can buy it, or bake your own. I used a store-bought honey wheat bread.
Two (2) large cucumbers, peeled and sliced thin
8-10 wedges of Laughing Cow spreadable cheese -- I used Light Swiss
Cookie cutter or knife, depending on what you'd like the sandwich shape to be


Directions
Spread the Laughing Cow cheese on both sides of bread.
Place about four cucumber slices in each sandwich.
Cut sandwiches to your liking; make sure you take off the bread crusts! You will get more sandwiches if you choose to do triangles (two per sandwich), or if you use a cookie cutter, you will probably only get one per sandwich.
Repeat until you're out of bread.

Note
If you save the extra bread pieces, you can make bread crumbs, croutons, or have something to feed the ducks!
