Black Bean Vegetable Soup

Break out your slow cooker for this one. Low & slow is how I chose to make this black bean soup, for a few reasons, but the biggest being that I didn't want to have to watch the soup while I was watching Battlestar Galactica. I know, I know. This recipe makes about four servings & is perfect for the cooler temps that we've been experiencing lately. Enjoy!



Prep Time: 10 minutes
Cook Time: 2-8 hours

Ingredients
Two (2) cans of black beans, slightly smashed -- do not drain
One (1) cup of vegetable stock
One (1) can of diced tomatoes
Two (2) cloves of garlic, minced
One (1) small red onion, diced
One (1) green pepper, diced
Two (2) tablespoons of homemade taco seasoning -- you can also just toss in some cumin, cayenne, and/or paprika, depending on your taste


Directions
Toss everything into a slow cooker.
Turn the slow cooker on high and cook for about an hour.


Turn to low and cook for 1-7 hours. The longer you cook, the more the flavors will mix.
Stir the soup intermittently.
Serve warm & enjoy!
