Leftovers Club: Chocolate Chip Potato Chip Blondies

Sweet & salty is just one of the best flavor combinations and this dessert does it especially well. I made these Chocolate Chip & Potato Chip Blondies for The Leftovers Club. If you remember, The Leftovers Club is the brainchild of Jennifer over at Savory Simple. It's an awesome group in which food bloggers share their leftover treats with one another. (Last month I made delicious spiced biscotti.) This recipe will make one pan of blondies and was adapted from Bake Your Day.


Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients
Two (2) cups + one (1) tablespoon of all-purpose flour
1/2 teaspoon of baking soda
1/4 teaspoon of salt
One (1) cup of light brown sugar
1/2 cup of granulated sugar
Twelve (12) tablespoons of butter, room temperature or slightly melted
One (1) tablespoon of vanilla extract
One (1) egg
One (1) egg yolk
Large handful of semisweet chocolate chips

Two (2) cups of potato chips -- I used Lay's, but you can use anything; the crunchier, the better.

Directions
Preheat your oven to 325F degrees.
Mix the flour, baking soda and salt in a medium mixing bowl. Set aside.
Cream the butter and sugars together in a large mixing bowl. You can use a hand or stand mixer for this, but I just did it by hand.
Add the vanilla extract and eggs to the sugar mixture. Blend completely.
Slowly add the dry ingredients into the wet ingredients and mix thoroughly.


Once the cookie dough is completely blended, fold in the chocolate chips and potato chips. -- Reserve a small amount of potato chips to top the blondies with.
In a greased baking dish (9" x 13"), slowly pour and spread the dough.
Sprinkle any remaining potato chip fragments on the top of the dough.
Bake for 25 minutes.
Remove from the oven and let cool before eating. -- Trust me; they're much tastier when they're no longer warm!
