Balsamic Strawberry Spinach Salad

This is a lovely salad that will get you in the mood for warmer weather. Not to mention, it's really easy to throw together, this recipe makes enough to share, and it's healthy. Enjoy!


Prep Time: 10 minutes
Cook Time
: 5 minutes

Ingredients
One (1) pound of strawberries
Two (2) ounces of sliced almonds
Three (3) ounces of fresh baby spinach
1 1/2 cups of aged balsamic vinegar

Directions
Preheat your oven to 350F degrees.
Cut off the top of each strawberry and slice each in half.
Put all of the strawberry slices into a bowl and cover them with 1 1/4 cups of balsamic vinegar.
Cover and let sit for at least five minutes.


Place
all of the sliced almonds onto a baking sheet and place in the oven for five minutes, or until lightly toasted.
In a large salad bowl, toss the spinach with the remaining balsamic vinegar.
Finally, top with strawberries and cooled toasted almonds.
