Thanksgiving Pizza

Grab all of your Thanksgiving leftovers and read on. This pizza was born last year post-holiday, and the tradition continues this year.  Also, I was in a land of no WiFi over Thanksgiving and was unable to get a bunch of recipes out to you, so keep an eye out all week for new ones! Hope your holiday was filled with good company and delicious food.



Prep Time
: 10 minutes
Cook Time: 10-15 minutes

Ingredients
Tofurkey, the traditional
meal of the Pilgrims
One (1) pizza crust -- I used Boboli premade crust, but was thinking about using a croissant- or cornbread-based crust next year
Three (3) tablespoons of pizza sauce
One (1) cup of mozzarella cheese
1/4 cup of stuffing
1/4 cup of mashed potatoes
1/8 cup of Tofurkey, chopped
One (1) tablespoon of Craisins
Any other leftover toppings that you would like

Directions
Preheat oven to 450F degrees.
Lightly cover pizza crust with sauce and cheese. You want to use less than you normally would for a cheese pizza.



Sprinkle
Craisins evenly over layer of cheese.
Crumble stuffing and place Tofurkey on top of the pizza, evenly.
Dollop mashed potatoes (the way that folks put ricotta on a pizza) at evenly spaced intervals on the pizza.
Bake on an ungreased baking pan for 10 minutes, or until the crust begins to get crispy.
Let cool and enjoy.
