Cranberry, Walnut & Goat Cheese Salad

This past month, I went to a family gathering and my aunt made this amazing salad. It was so good and truly is so easy to make. Toss it together for your next event!


 
Prep Time: 10 minutes
Cook Time: none

Ingredients
1/2 pound of your favorite greens -- I used fresh spinach
1/4 cup of dried cranberries
1/4 cup of walnuts, shelled
Eight (8) ounces of goat cheese, crumbled
Raspberry vinaigrette for topping -- I used the Panera brand, but there are plenty of recipes (like this one from the Kitchn) out there to help you make your own!

Directions
Wash your spinach and toss it in a large mixing bowl.
If you're feeling fancy, heat your oven and toast the walnuts (usually 5-10 minutes at 375F degrees).
In the large bowl, toss in the cranberries and walnuts and mix thoroughly.


Spoon in the goat cheese. If you'd like the goat cheese to coat the spinach, toss thoroughly. If not, let it sit on top, or shake the bowl to spread out the cheese without pressing it into the spinach.
Serve cold, with the vinaigrette on the side.
