Corn Salsa

This is a copycat recipe of Chipotle's corn salsa (one of my favorite toppings to get at Chipotle!). Make a bunch of this and keep it on hand for tacos, salads, or even to snack on by itself with some tortilla chips. This recipe makes a small bowl, but feel free to change what you need to make a batch to fit your needs.


Prep Time: 5-10 minutes
Cook Time: none

Ingredients
One small (11 oz.) can of sweet corn kernels -- you can use fresh corn on the cob too!
1/4 cup of fresh cilantro, chopped finely
1/8 cup of red onion, chopped finely
Juice from two limes

Directions
Once you chop the cilantro and onion, toss them in a small bowl together.
Toss in the corn and lime juice.
Mix until completely blended and serve cool.

  1. I work at Chipotle and you are missing some finely chopped jalapenos and some kosher salt.
