Circus Animal Cookie Truffles

I saw this recipe on Pinterest and was immediately interested because of my childhood love of these sugary cookies. I brought these to a friend's event & people really seemed to like them. This recipe makes 30 truffles.




Prep Time: 45 minutes of active prep, 3-4 hours of freezing
Cook Time: no cooking involved

Ingredients
4 1/2 cups of frosted Circus Animal cookies
3/4 can of cream cheese frosting
4 Ghiradelli baking white chocolate bars -- I used half dark & half white chocolate, but I would suggest using only white chocolate
Rainbow nonpareils

Directions
Cover a rimmed baking sheet or casserole dish with foil. Set aside.

In a food processor, grind Circus Animal cookies, one cup at a time, until they are crumbs. Set aside in a large bowl.
When all cookies are ground to crumbs, spoon the frosting into the bowl and mix. I used my hands, but you can use a spoon, which might take longer, but will probably have easier clean up.
Portion
truffle-sized balls and roll with your palms until you have formed evenly rounded balls.
Place all truffles in the foil-lined baking sheet and freeze for at least three hours.
After the truffles are completely frozen, melt chocolate as directed on label.
Dip the truffle balls into the chocolate (you can use a fondue stick, spoon, or fork to do so) and set on the foil.
Immediately after the truffle is dipped in chocolate, sprinkle nonpareils over the truffle.

Once you have finished dipping all of the truffles, place baking sheet in the refrigerator and chill for about 30 minutes, so the chocolate can set.
Remove from the fridge and enjoy!
