Pistachio, Goat Cheese & Arugula Pizza

This pizza is somewhat inspired by Owl Bar's wild mushroom pizza. Instead of using mushrooms, though, I used pistachio. You'll find that these toppings together create a fresh, nutty, and filling pizza.


Prep Time: 10 minutes (if you make your own pizza dough, add 30 minutes)
Cook Time: 25 minutes

Ingredients
One (1) large thin pizza crust -- I use Boboli
15 ounces of pizza sauce
1 1/2 cups of mozzarella, shredded
1/4 cup of parmesan, shredded
1/4 cup of goat cheese, crumbled
1/4 cup of pistachios, shelled
1/2 cup of fresh arugula
One (1) tablespoon of olive oil
Two (2) cloves of garlic, minced

Directions
Preheat the oven to 450F degrees.
Place the pistachio meats in plastic baggie and crush them into smaller bits.


Spoon the sauce and one clove of minced garlic onto the pizza crust and spread evenly.
Mix the mozzarella and half of the parmesan together and evenly sprinkle across the sauce.
Spread pistachio pieces and goat cheese over the cheese layer.
Bake for 25 minutes, or until crust is golden brown.


While the pizza is baking, toss the arugula in a mixture of the olive oil, remaining minced garlic, and remaining parmesan.
When the pizza is done, remove from the oven and top with arugula mixture.
