Coconut Banana Bread

I found this recipe on Pinterest and immediately wanted to make it. Not only does it add coconut (one of my favorites!) to banana bread, but it's low-fat at only 115 calories per slice! The recipe originally comes from FitSugar and makes one loaf of delicious bread.


Prep Time: 10 minutes
Cook Time: 50 - 60 minutes

Ingredients
1 1/2 cup of all-purpose flour
One (1) teaspoon of baking powder
1 1/4 teaspoon of baking soda

Three (3) ripe bananas, mashed 
3/4 cup of coconut flakes, sweetened
1/2 tablespoon of coconut oil
One (1) teaspoon of vanilla extract
1/2 cup of light brown sugar 

Three (3) egg whites
1/4 cup of plain Greek yogurt
-- I used Chobani
1/4 cup of orange juice
1/2 teaspoon of ground cinnamon

Directions
Preheat your oven to 350F degrees.
In a small mixing bowl, whisk together all of your dry ingredients (flour, baking powder, and baking soda). Set aside.
In a large mixing bowl, mix the bananas, light brown sugar and the vanilla extract. 


In the large bowl, add egg whites and coconut oil, and mix until smooth.
Slowly add the flour mixture into the wet ingredients and continuously mix until completely blended.
Mix the Greek yogurt and orange juice into the dough and stir until blended.
Finally, add most of the coconut flakes and mix thoroughly.
Spoon into a greased loaf pan (or, you can make muffins with the batter as well).


Sprinkle the remaining coconut flakes and the ground cinnamon on top of the batter.
Bake for 50 minutes on the middle oven rack.
At the 50 minute mark, place on the top rack and bake for another 5 - 10 minutes, or until the bread is baked completely through.
Let cool and slice into 16 pieces.
Serve with butter, honey, or on it's own.
