My partner's all-time favorite meal is a childhood memory of bacon fried rice, and since I like a challenge - or am a masochist, who can really tell? - I decided to make a vegetarian version of it. It was definitely an involved meal, but it also yielded a large amount (4-5 heaping servings) and was delicious. I used recipes from SimpleVeganBlog and Pinch of Yum to guide me.

Chik'n Fried Rice
Making fried rice at home is always something that daunted me. Until now, the closest I got was buying the frozen fried rice and tossing it into a frying pan. Last night, I conquered my fears. It actually turned out really well! There were a few things I want to work on (see "notes"), but overall it was a huge success. This recipe makes 4-5 servings and was inspired by this post by Rachel Schultz.

Chik'n & Mushroom Arugula Salad
This salad was a spur-of-the-moment, let's-clean-out-the-fridge salad. Sometimes that can go poorly, but this time it went wonderfully. The flavors worked really well together and we didn't waste any produce. This recipe makes two servings. Enjoy!
