Buffalo Chickpea Salad

Between work, school, and my internship, I am constantly busy. This salad was perfect for me to make the night before, toss it into a Tupperware container and move on with my life. Not to mention that this recipe (originally from Betsy Life) makes two servings, so you can share or have leftovers all for yourself! Enjoy!

Four-Bean Salad

Okay, so you know three-bean salads. They're delicious, healthy, full of protein. Well, I upped the ante and added a fourth bean. I know; I take some pretty intense culinary risks. This healthy and filling salad is perfect with tortilla chips, on a green salad, on pasta, or on its own. Enjoy the protein and the hearty taste! This recipe is based off of a Real Simple recipe and makes a huge bowl.

Sweet & Spicy Roasted Chickpeas

A few weekends ago I went to the amazing Birroteca & ordered spicy roasted chickpeas for an appetizer. The entire table devoured them within minutes! They were spicy with a sugary, salty taste to them and we were all in love. I've been since looking for a similar recipe and I think I found it in The Lean Green Bean's blog. This recipe is really easy to make & doesn't cost very much at all. My rendition makes enough for about two to three people to finish in one sitting.

You have probably seen this awesome Sweet Potato Veggie Burger recipe by Kathy over at Happy.Healthy.Life pinned all over Pinterest.  I've basically taken that recipe and made a few modifications to that to better fit my preferences. This recipe is crispy on the outside, creamy, sweet & tangy on the inside. The coconut oil really adds to the depth of flavor, something you wouldn't find when using other cooking oils. This recipe makes 6-8 medium-sized fritters.

Mock-Tuna Chickpea Salad

I have heard this concoction called a variety of things (my favorite is coined by The Kitchn as "Chickpea of the Sea"), but whatever you call it, it is a delicious protein-packed meat alternative. This recipe is a modification of a few different recipes including one by The Apron Archives and The V Word. My recipe will make three to four servings.

Tomato Chickpea Pesto Soup

This soup is hearty, flavorful, and perfect for my Autumn Soup Exchange. You can add your own spices to personalize the taste. The garlic, salt & pepper, and pesto really added enough flavor for me. This recipe makes 6-7 cups of soup.


Prep Time: 10 minutes
Cook Time: 45 minutes

Ingredients
One (1) medium onion, chopped
Two (2) cloves of garlic, minced
One (1) 28 oz. can of crushed tomatoes -- You can make this at home, but canned works well too.
One (1) 15.5 oz. can of chickpeas, drained and rinsed
One (1) tablespoon of extra virgin olive oil
One (1) cup of water
Five (5) tablespoons of basil pesto
One (1) teaspoon of sugar
1/2 teaspoon of salt
Pepper to taste

Directions
In a saucepan, use the oil to saute the onions first, and then add the garlic. Cook until onions are soft.
Add the water and the crushed tomatoes. Heat until lightly boiling.
Stir in sugar, salt, and pepper. Reduce the heat.
Add the chickpeas and let simmer for ten minutes.
Finally, add the pesto. You can either dollop pesto on each serving or stir in if the soup will be refrigerated.
Enjoy!
